From a garage roaster to a neighborhood staple
Night Owl Coffee Roasters began when founder Emma Carter, tired of hunting for a decent cup after her own late shifts, started roasting beans out of a converted garage. What started as coffee for friends turned into a full café built specifically for people whose days don't run 9-to-5 — nurses, students, delivery drivers, and anyone chasing a deadline past midnight.
Every bag we roast is small-batch, cupped in-house, and served by a team that genuinely loves this stretch of the clock. We're expanding now, but the mission hasn't changed: a warm seat, a strong cup, and a door that stays open long after everyone else has closed.
How we got here
Emma began roasting small batches for friends and coworkers out of a converted garage in Sleepy Hollow.
Night Owl opened its first café doors, with hours designed around night-shift regulars from day one.
We brought roasting fully in-house, partnering directly with growers across Ethiopia, Colombia and Indonesia.
Open mic nights, latte art classes and roastery tours became a regular part of the Night Owl calendar.
Now expanding to new neighborhoods, with online pickup ordering to make the wait a little shorter.
